Rosemary Fingerling Potatoes



This recipe is so simple and easy, and it will make your house smell amazing!

You will need:

fingerling potatoes

rosemary

pink himalayan sea salt or celtic salt

ground pepper

cast-iron skillet

coconut oil

Preheat over to 425. While it's preheating, place your cast-iron on the burner on medium-high and wait for it to warm up.

In the meantime, wash and cut the potatoes in half. When your cast-iron is nice and hot, throw a dollop of coconut oil in the cast-iron skillet. Throw the potatoes in the cast-iron and add the ground pepper and salt. Get a nice sear on the potatoes. This should take around 5 minutes.

Add the fresh (washed) rosemary. Put as much or as little rosemary as you like. That's the nice part about cooking with whole, real foods, you can adjust it all to your liking.

Leave it on the burner for another minute or so until the oven is completely preheated. Place the cast-iron skillet in the oven at 425 for around 20 minutes, or until they are soft and done to your liking! Enjoy!
