Beautiful heirloom carrots in a sweet glaze have a holiday dish that's tastes like candy. Add these to your holiday menu!
Depending how big your family and/party is,
You will need:
Cast-iron skillet
1-3 bunches Heirloom carrots
1 tbsp Coconut oil
1 tbsp raw, organic honey
Sprinkle of coconut sugar
3 sprigs of fresh rosemary
Directions:
Preheat oven to 400 degrees F.
Wash the carrots and rosemary. Chop the carrots. Heat your pan on medium until it's nice and hot. Once it's hot, add the coconut oil and carrots. Let them sear for a couple of minutes. Add the honey and let them cook for a couple more minutes to absorb the sweetness. For an extra dash of sweet, add a sprinkle of coconut sugar. You've got the heirloom carrots in a sweet and gooey glaze at this point. Place the 2 1/2 sprigs of rosemary on top of the carrots to give them more of that holiday taste.
Place cast-iron skillet in oven for 20 minutes or until soft enough to dig your fork into them.
Once they're done, plate them and add the last 1/2 sprig of rosemary as a garnish. For more presention, sprinkle a dash more coconut sugar on the carrots and around the plate.
